Replacing all 12 pads together helps keep the three cast-iron burner grates sitting at the same height across the cooking surface. New pads at every support point can reduce rocking and uneven transitions between grate sections, making it easier to slide heavier pots and pans smoothly from one burner grate to another.
The pads also help prevent direct contact between the cast-iron grates and the cooktop surface.
